Notes on this brown rice with spinach:

Ingredients

  • i tablespoon extra-virgin olive oil
  • 1 pocket-size onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/iv cups quick melt brown rice (meet notes)
  • i tablespoon fresh thyme, chopped
  • i/2 teaspoon kosher salt
  • 1/iv teaspoon blackness pepper
  • 2 1/two cups low-sodium craven or vegetable broth
  • 1 (eight oz.) handbag fresh spinach, roughly chopped
  • 1/4 loving cup grated Parmesan cheese (plus extra for serving)

Instructions

  1. Heat olive oil in a large pan over medium heat.
